CLUB CHICKEN CASSEROLE 
1/4 c. melted butter
1/4 c. flour
14 1/2 oz. evaporated milk (or 1 2/3 c.)
1 c. chicken broth
1/2 c. water
3 c. cooked long grain rice
2 1/2 c. diced cooked chicken
3 oz. sliced mushrooms, drained (optional)
1 1/2 tsp. salt

Cook in 350 degree oven for approximately 40 minutes (or until heated).

In saucepan, melt butter; blend in flour. Add evaporated milk, chicken broth and water. Cook quickly, stirring constantly until mixture thickens and bubbles. Add rice, chicken, mushrooms and salt. Pour into greased 2 quart casserole. Bake uncovered in 350 degree oven for 40 minutes or until heated through. Makes 8-10 servings.

I have made this a few times, and it is always a hit. Have your items ready prior to starting. Once you get to the evaporated milk section, it moves pretty steadily. It's not just a family favorite but a neighborhood favorite as well. Made this for my neighbors when a huge limb fell in my yard and it was all cleaned up before I got home.
