MARINATED MAHI MAHI
1 lb. mahi mahi (can use any white fish)

MARINADE:

1/2 c. olive oil
1/2 c. soy sauce (I prefer Kikkoman)
1 tbsp. onion powder
1/2 tsp. pepper
2 cloves garlic, crushed
1/4 - 1/2 c. finely chopped onion
8 oz. sliced mushrooms

Combine marinade.

Wash fish and place in zip lock bag. Pour marinade over fish and move fish around so marinade covers and surrounds fish. Marinade in refrigerator for 1 to 4 hours. Spray glass casserole dish with cooking spray. Pour fish and marinade over sliced mushrooms in casserole. Bake in 350 degree oven until fish is flaky.

This was an easy and delicious recipe. My family said they definitely want to eat it again! I served on a bed of rice, and with a side of vegetables. Perfect dinner. 35 minutes was the magic bake time for me too.

Too much onion... Very one dimensional... C'mon cooks, you could have done a lot better.

Suggest mild, white onions so as not to overpower the fish. We use Vidalias.

This was great. Thanks to previous reviewers for including the time needed to cook. If I made it again I would double the mushrooms. I discovered that I didn't have an onion and used chopped shallots instead.

This was a great, easy marinade (and I am a novice cook). Turned out delicious. I cooked it as others had recommended for 35 minutes. I tried it with portabello mushrooms and they tasted amazing after being cooked in the marinade.

Very much liked this recipe; Our variation was to cook the fish on a barbecue on very high heat.
