MAIN COURSE CHICKEN SALAD | |
1 1/2 c. mayonnaise 5 tbsp. cider vinegar 4-5 c. chicken (I use canned) 1 c. diced celery 2 tbsp. diced onion 1 1/2 c. slivered almonds 1 1/2 c. diced seedless green grapes 1 c. diced and seeded cucumber 2 c. diced apples (Granny Smith) 1 c. diced green pepper Chill overnight. Serve on lettuce or in wedge of a sliced and seeded cantaloupe. Makes approximately 20 sandwiches. |
