MAIN DISH POTATO SALAD 
2 lb. potatoes
3 stalks celery, chopped
1 lb. rump veal or lean pork
1 lg. onion
1 pimento
Salt & pepper
Salad dressing
1 head lettuce

Cook peeled potatoes; cool and dice. Cook veal, cool and dice. Grind onion and dice pimento. Mix veal and all the vegetables. Add salt and pepper to taste, then mix in enough salad dressing to moisten. Serve on a lettuce leaf. Serves 8.
