HEALTHIER BAKED STUFFED SHELLS
1 1/2 lb. ground turkey
1/2 tsp. fentil or sage
1/2 tsp garlic powder
1 small bag frozen spinach
1 small carton small curd cottage cheese
1 egg, beaten
3 cloves garlic, minced
1/2 tsp. oregano
salt and pepper to taste
1 pkg. large pasta shells
large jar Ragu or you favorite pasta sauce
grated Swiss or Parmesan cheese

Mix together turkey, fentil or sage, and garlic powder. Mix well to get the taste of Italian sausage.

Drain and squeeze spinach. Mix with cottage cheese. Then mix with turkey mixture. Next, add egg, garlic, salt, pepper, and oregano. Mix well.

Meanwhile, cook pasta just enough to soften and handle easily (5 minutes). Cool after draining. Stuff shells laying each in a 9 x 13 inch glass pan. Cover with pasta sauce. Sprinkle with cheese. Cover and bake 350°F for 45 minutes.

Serve with tossed salad with dressing made with 1/2 cup bacon drippings, 1/4 cup tarragon vinegar, 2 tablespoons sugar, chopped parsley, 1/2 tsp. basil, celery seed, salt, pepper and 1/2 cup water, slightly heated to melt oil. Toss over salad.

Great with garlic toast.
