SPINACH SALAD 
1 (10 oz.) pkg. fresh spinach, washed & drained
2 hard-boiled eggs, chopped
4 strips crisp bacon or bacon bits

DRESSING:

1/2 c. olive or salad oil
1/4 c. vinegar
2 tbsp. sour cream
1 tbsp. sugar
1/2 tsp. salt
Coarsely ground pepper
1 tsp. parsley
1 clove crushed garlic or 1/2 tsp. onion juice

Make dressing about 6 hours before serving. Chop up spinach and put on individual serving plates. Place chopped eggs and bacon on top. Pour dressing over salad. Serves about 6.
