SPINACH SALAD 
1 bag fresh spinach, washed & trimmed
6 strips bacon, fried crisp & crumbled
1 bunch scallions, sliced
1/4 lb. fresh mushrooms, sliced
Croutons (opt.)

DRESSING:

2 tbsp. lemon juice
6 tbsp. salad oil
3/4 tsp. salt
Fresh ground pepper
1 clove garlic, minced
1/4 tsp. dry mustard
1/4 tsp. sugar
1 raw egg yolk

Combine dressing ingredients. Beat with wire whisk until well blended. Refrigerate overnight. Just before serving place spinach, bacon, scallions, mushrooms and scallions in salad bowl. Add salad dressing and toss well. 4 servings.
