SCALLOPED POTATOES 
8 med. potatoes
3 tbsp. parsley
1/4 c. chopped onion
3/4 c. shredded cheddar cheese
3 tbsp. butter
1 c. light cream

Preheat oven to 350 degrees. Peel and slice potatoes. Butter a casserole dish. Alternate 3 layers of each. Start with potatoes, then add other ingredients, until you have three layers. Top with butter. Pour cream over all the potatoes. Cover and bake 1 hour. Bake an additional 1/2 hour uncovered.
