ZUCCHINI BREAD 
2 c. grated zucchini, do not peel
3 c. plain flour
1 c. vegetable oil
2 c. sugar
1/2 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
3 eggs
2 tsp. cinnamon
1 c. chopped dates or raisins
1 1/2 c. chopped nuts
1 c. coconut
1 tsp. vanilla

1. Sift flour, soda, salt, cinnamon - twice. Set aside.

2. Mix eggs, oil, sugar, vanilla well. Add dry ingredients, mix well.

3. Fold in zucchini, nuts, raisins, and coconut.

4. Spoon into 2 lightly greased and floured loaf pans.

5. Bake at 350 degrees for 1 hour or until golden brown.
