ZUCCHINI BREAD 
2 c. white sugar
3 eggs
1 c. oil
2 tsp. vanilla
3 c. flour
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
3 c. zucchini, grated
1 1/2 c. nuts
1 1/2 c. coconut
1 c. raisins (optional)

Beat sugar and eggs until creamy. Mix oil and vanilla together, add to sugar and eggs - mix again. Add dry ingredients, blending well. Mix in grated zucchini on low speed. Stir in nuts, coconut and raisins. Bake in greased and floured loaf pans at 350 degrees for 50 minutes to 1 hour until lightly browned. Makes 3 pans. Glass pans - bake at 325 degrees. (DO NOT DRAIN ZUCCHINI).
