ZUCCHINI BREAD 
3 eggs
3/4 c. oil
1 c. sugar
3 c. flour
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
3 tsp. vanilla
1 c. chopped nuts
1 c. raisins
3 c. zucchini
1/2 c. brown sugar
1 c. coconut
1 c. crushed pineapple, well drained

Beat eggs and oil; peel and grate zucchini. Mix all other ingredients. Put eggs and oil in all the other ingredients. Add zucchini last. Pour into greased and floured bread pans. This is two. Bake 1 hour at 325 degrees.
