ZUCCHINI BREAD 
3 lg. eggs
1 c. vegetable oil
3/4 c. nuts
3 c. grated raw zucchini
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
3 c. flour
2 c. sugar
1 tsp. cinnamon
2 tsp. vanilla
3/4 c. shredded coconut

Combine ingredients. Bake in 2 loaf pans at 325 degrees for 1 hour or until lightly browned. Yield 2 loaves.
