P.F.C.'s CORDON BLEU WITH HONEY
MUSTARD SAUCE
 
6 whole boneless, skinless chicken breast
6 slices ham, sliced thin
6 slices Swiss cheese
Flour
2 eggs
1 c. water
Bread crumbs

Pound out chicken until flat. Lay slice of ham in center of each chicken breast. Lay slice of Swiss cheese in center of each slice of ham. Roll ham around cheese then wrap chicken around ham roll.

Put gathered end of chicken down in pan and cover with foil. Bake at 350 degrees until done about 45 minutes to 1 hour. Take cooked chicken breast and dip in flour then in mixture of eggs and water then into bread crumbs. Brown off in skillet of hot grease or in fry baby until golden brown. Serve with honey mustard sauce on side.

HONEY MUSTARD SAUCE:

1 c. mayonnaise
1/3 c. prepared mustard
1/4 c. honey
1/2 sm. onion, grated fine
3 dashes Tabasco sauce
6 dashes Worcestershire sauce
Pinch celery seed

Mix all ingredients together. This sauce is good to serve with chicken strips, cordon bleu, or as a salad dressing.
