QUIK CHICKEN | |
4 boneless, skinless chicken breast halves (1 lb. or 4-6 boned thighs) 1 egg, slightly beaten 1 tbsp. water 1/2 c. seasoned bread crumbs 2 tbsp. butter 1 3/4 c. Prego spaghetti sauce 1/2 c. shredded Mozzarella cheese 1 tbsp. grated Parmesan cheese 1/4 c. chopped fresh parsley Flatten chicken to even thickness. Dip into egg and water, then into crumbs to coat. Melt butter in heavy skillet over medium heat, brown chicken on both sides. Add sauce. Reduce heat. Cover. Simmer 10-15 minutes. Sprinkle with cheeses and parsley. Cover. Simmer 5 minutes until cheese melts. Serve with pasta or vegetable dish. |
