RED SKIN POTATO SALAD 
2 lb. red skin potatoes
1 1/2 c. Miracle Whip
1 tbsp. vinegar
1 tbsp. prepared mustard
1 tsp. salt
1/4 tsp. pepper
1 c. celery, chopped
1/2 c. onion, chopped
4 hard-cooked eggs, chopped

Wash potatoes and cut into cubes to measure about 6 cups. Boil potatoes in water until tender. Drain immediately and rinse in cold water.

Mix Miracle Whip, vinegar, mustard, salt and pepper in 4 quart bowl. Add potatoes, celery and onion; toss. Stir in eggs. Cover and refrigerate at least 4 hours. 10 servings.
