SUNDAY CHICKEN PIE 
Pastry for 1 crust pie
1/3 c. butter
1/3 c. pre-sifted flour
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 c. chicken broth
1/2 c. cream (or whole milk)
2 c. cooked chicken, diced
1/4 c. pimentos, diced

Preheat oven to 475 degrees. Grease baking sheet and 1 1/2 quart casserole.

Roll out pastry to fit top of casserole. Bake.

Meanwhile, melt butter in saucepan. Stir in flour, salt and pepper. Gradually stir in broth. Cook over medium heat, stirring constantly, until thickened and smooth. Stir in cream. Simmer for 1 minute.

Remove from heat. Stir in chicken and pimentos. Turn into casserole.

Top with pastry quarters. Bake in preheated oven for 10 minutes or until hot and bubbly.
