SUNDAY FRIED CHICKEN 
2 c. all-purpose flour
1/2 c. corn meal
2 tbsp. salt
2 tbsp. dry mustard
2 tbsp. paprika
2 tbsp. garlic salt
1 tbsp. celery salt
1 tbsp. pepper
1 tsp. ground ginger
1/2 tsp. dried thyme
1/2 tsp. oregano
1 broiler-fryer chicken (2 1/2 to 3 1/2 lbs.), cut up
Cooking oil

Combine all ingredients except chicken and oil. Place about 1 cup flour mixture in a paper or plastic bag. Shake a few chicken pieces in the bag at a time, coating well. On medium high heat 1/4 inch oil in a large skillet. Brown chicken on all sides, remove to a large shallow baking pan. Bake, uncovered for 40 to 60 minutes or until done.

NOTE: Recipe makes enough coating for 3 chickens. Store unused mixture in an airtight container. Makes 4 to 6 servings.
