ROTELLE WITH BROCCOLI AND
ZUCCHINI
 
8 oz. rotelle pasta
5 c. broccoli, cut up
2 tbsp. butter
2 tbsp. olive oil
2 med. zucchini, cut up
1/4 c. scallions, chopped
1/2 c. Parmesan
1/2 tsp. salt
Pepper to taste

Cook rotelle. Five minutes before it is done, add broccoli. Remove and drain. In same pan, add butter and oil. When it stops foaming, add zucchini, scallions and garlic and cook 2 to 3 minutes. Add pasta and broccoli and stir to mix. Add cheese and salt and pepper, stir gently. Serves 6.
