MANHATTAN CLAM CHOWDER | |
2 c. ground fresh clams in their liquid or 2 (7 oz.) cans minced clams 1/2 onion, minced 2 bacon, sliced cut up 3 carrots, cut up 2 stalks diced celery 2 c. water 1/2 c. tomato sauce 1/4 tsp. thyme 1 tsp. salt 1/2 bay leaf 1/4 tsp. black pepper Saute bacon and onion in large kettle or pot. Add liquid from clams, water, carrots, potatoes, celery, tomato sauce and seasoning. Cook about a half hour. Add clams and simmer 5 minutes. Cover and let flavors blend. Correct seasoning if necessary. If you like it more tomatoy add additional tomato sauce. |
