SPINACH ALLA ROMANO 
4 lbs. spinach
3 cloves garlic, finely minced
1/3 c. parsley, finely chopped
1/3 c. soft butter
1 pt. ricotta cheese
6 eggs
1 c. Parmesan cheese, freshly grated
3 c. milk
Salt & pepper to taste

Combine spinach, parsley and butter. In oven asserole mix ricotta with eggs and grated cheese; blend in pinach mixture, milk, salt and pepper and garlic. Dot with butter and bake in a 350 degree oven for 45 minutes.

Flavor was wonderful. Halved the recipe and used only 10-oz bag of fresh spinach. A lot of liquid collected in bottom of baking dish. Would consider leaving out milk next time. Flavor was so good that I'd like to try again.
