STRACCIATELLA ALLA ROMANO 
4-6 chicken consomme

Put chicken consomme in a pot and bring to a boil on high heat.

EGG MIXTURE:

4 eggs
1/2 lemon
1/3 c. Parmesan cheese, coarsely grated
1 tbsp. fresh parsley, finely chopped

Beat eggs in a bowl then add Parmesan cheese, lemon juice and parsley and mix together. Remove chicken consomme from heat but leave in pot. Add egg mixture to chicken consomme and stir.

Return chicken consomme and egg mixture to medium heat and simmer for 2-3 minutes stirring frequently. Pour into warm soup bowls, stirring while soup is being poured so that egg is evenly distributed throughout chicken consomme. Serve. This recipes serves 6 people.
