“HERSHEY'S COCOA FUDGE” IS IN:

HERSHEY'S COCOA FUDGE 
2/3 cup Hershey's cocoa
3 cups sugar
1/8 tsp. salt
1 1/2 cups milk
4 tbsp. (1/2 stick) butter
1 tsp. vanilla

Thoroughly combine dry ingredients in a heavy 4 quart saucepan; stir in milk. Bring to a bubbly boil on medium heat, stirring constantly. Boil without stirring to 234°F (soft ball stage). Bulb of candy thermometer should not rest on bottom of saucepan.

Remove from heat, then add butter and vanilla. Do not stir. To prevent a "grainy" or "sugary" texture, do not scrape down sides of pan.

Cool at room temperature to 110°F. Beat until fudge thickens and loses some of its gloss. Quickly spread in a lightly buttered 8 or 9 inch square pan. Cool.

TIPS:

• After the mixture boils gently for about 20 minutes, the bubbles should shrink and there will be less liquid in the pan. At this point, continue cooking but begin to test for soft ball stage.

• For a creamier fudge, you can substitute 3/4 cup evaporated milk plus 3/4 cup whole milk in place of the 1 1/2 cups of whole milk.

• If you find your fudge wasn't cooked enough, add a tablespoon of water, reheat and begin again.

Cooks Note: Use of a candy thermometer is recommended.

Makes 3 dozen squares.

My mom made this for us when we were small. She died when I was 12 and I started making it when I was 14 (55 now). I made it for my kids and they still ask for it. Now I make it for the grands. I miss it being on the box too. I lost my recipe so came looking... I like it best the old way.

This is my favorite fudge! I love the deep cocoa flavor and I like the sugary consistency instead of the creamy kind. Unfortunately it doesn't always harden. I made it tonight and could hardly get it out of the pan, it may be over done.

I made a double batch of this for Thanksgiving. Sadly, it just ended up being topping for sundaes...lol!

Tonight (for no other reason than to score brownie points with the spouse), I made a single batch.

This is the best recipe I have ever had. Grandma, my aunt, mom, and my wife who has passed away now all used this recipe. It is great at holiday time. My wife's always came out just right. I am going to give it a try next Saturday in her honor. Follow the instruction! Ok, I will. Good stuff. Hershey's makes great hot chocolate too!

We made this fudge for many years but I remember best sending it to my lil brother serving in Viet Nam in 1968.Other soldiers would get fudge from home but their's we be all broken up and powdery.This fudge would travel very well.The guy's who got fudge in good condition had someone that made this same recipe.He passed away last year but never forgot about this fudge.We heard about it every Christmas as a hint for one of us to make it for him.lol

My Mom used to make this when we were kids, and she would add some chopped walnuts. Her poor little arm almost fell off during the stirring, but the end result was SO worth it! I don't eat ANY kinds of other fudge. Especially the kind with the marshmallow fluff stuff. YUK!! Thank Heaven for Hersheys'!!

I love this fudge. I could never get the soft ball test to work, so I use a candy thermometer. I always prepare it with peanut butter. HOWEVER, if you do make it with peanut butter, this cools and hardens it significantly faster, so when I add it with the butter and vanilla, I beat immediately instead of letting it cool, and pour right then. I learned this by trial and error...

My mom always made this fudge and it brings back so many memories. The best ones are when it wouldn't get hard and we would all get spoons and eat that warm gooey fudge right out of the pot. Best advice is to get a candy thermometer.

very good recipe but it started hardening in the pan. It didn't make it to the 110°F mark on the thermometer. just a little alteration to the recipe and its lovely.

This is the best fudge ever. My mom made it when I was a kid and now I'm making it 40 years later. Brings back a lot of memories. It takes practice to get this recipe right,but is well worth the wait. Love You Hershey's Cocoa.

THIS is the best fudge ever!!! We grew up on it also, such wonderful memories :) No other fudge comes close to comparing. I change nothing, I live in FL, it's raining out, don't have a candy thermometer, and I have not made it in years. I made it tonight, came out perfect :) full boil it about 20 min, cool down time is about 25 min, depending on the pan one uses, mine is 9.5" across top, 4" deep.

I remember my mother making fudge and using approximately 3 tablespoons of cocoa. She said her brother taught her. She has been dead almost 20 years and in her honor I will make fudge in 2012. I am known for my microwave Fern Fudge with chocolate chips and marshmallow creme; however, nothing beats my mothers fudge.
