NICOLE'S CRISPY SPICY MAC N'
CHEESE
 
2 1/2 cups elbow macaroni pasta
2 tbsp. butter
2 cups grated cheddar and shredded Mozzarella cheese
1/4 cup bread crumbs
1 tsp. cayenne pepper
1/2 tsp. pepper flakes
1 small purple onion, chopped
1 small yellow onion, chopped

Preheat oven to 350°F.

Cook pasta according to package directions, but leave it so it has a bite to it (al denté).

Melt butter and cover the bottom of a casserole dish. Chop onions into strips, also grate cheeses (if needed) and mix in both peppers and set aside.

Add cooked and drained pasta to bottom of the dish. Add chopped onions on top of the pasta, cover with tin foil and place in oven. Let it bake at 350°F for 15 minutes.

Remove from oven and add cheeses on top, sprinkle breadcrumbs (to add a little bit of crispiness) and place back in oven for an additional 10 minutes.

Remove from oven. Serve while cheese is hot.
