BANANA COFFEE CAKE 
1/2 c. shortening
2/3 c. sugar
2 eggs
3/4 c. mashed banana
1 1/4 c. sifted all purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. chopped pecans or walnuts

Cream shortening and sugar until fluffy. Add eggs, one at a time, beating well after each. Stir in bananas. Sift together dry ingredients; add to banana mixture; mix well. Stir in nuts. Pour into greased 7 x 11 x 2 inch Pyrex baking dish. Bake at 350 degrees for 30 to 35 minutes. 8 to 10 people.
