BANANA COFFEE CAKE 
3 tsp. Nescafe Instant Coffee
1 c. butter
1 1/2 c. brown sugar
2 eggs
3 bananas (ripe)
2 tbsp. hot water
1 1/2 c. sifted flour
2 tsp. baking powder
1/2 c. chopped walnuts

Cream butter and sugar until light and fluffy. Gradually beat eggs. Mash bananas and add to creamed mixture. Dissolve coffee in hot water. Sift flour, baking powder, gently fold in the Nescafe Instant Coffee, sifted dry ingredients and half the walnuts into the creamed mixture. Spoon into a greased 8" ring tin. Bake at 350 degrees for 35 minutes. Leave in tin for 3 minutes to cool, then place on wire rack. When cold, ice with coffee icing and sprinkle with remaining nuts.

COFFEE ICING: Soften 2 tablespoons butter, sift 1 cup icing sugar. Dissolve 1 teaspoon Nescafe in 2 tablespoons hot water. Combine butter, icing sugar and coffee. Beat until smooth.
