BANANA DUTCH COFFEE CAKE 
1 3/4 c. flour, sifted
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
2 eggs
1 c. bananas, mashed
1/3 c. shortening
2/3 c. sugar

Sift dry ingredients. Beat eggs. Cream shortening and gradually add sugar. Add eggs and mix well. Add flour alternately with mashed bananas and beat hard after each addition. Pour into oiled 9 inch square pan. Make topping by combining 2 tablespoons sugar, 1/4 teaspoon cinnamon, 1 teaspoon grated orange rind and 1/4 cup chopped nuts. Sprinkle on top of cake batter. Bake 30 to 35 minutes at 350 degrees.
