MEDITERRANEAN SALAD 
2 boxes frozen mixed vegetables
1/2 c. sliced green olives
1/2 c. sliced scallions
1/2 c. diced raw cauliflower

DRESSING:

1/3 c. olive or salad oil
3 tbsp. wine vinegar
1 tbsp. capers
1 clove garlic, crushed
1 - 1 1/2 tsp. salt
1/8 tsp. pepper

Cook mixed vegetables until just "crisp tender". Drain and chill. Mix with olives, scallions and cauliflower.

Make dressing, dress salad and let marinate about 1 hour before serving.
