SWEET POTATO CASSEROLE 
6 med.-size sweet potatoes, cooked
1 egg, beaten
1/2 c. heavy cream
5 tbsp. sugar
1 tsp. salt
1/2 tsp. nutmeg
1 tsp. rum or rum extract
2 tsp. orange rind
1 tbsp. melted butter

Peel, mash and whip potatoes until smooth. Add beaten egg, heavy cream, sugar, salt, nutmeg and rum. Beat until light and fluffy.

Put in buttered 1 1/2-quart casserole. Sprinkle with orange rind evenly. Drizzle melted butter over top. Place in hot oven (400 degrees) for 30 minutes or until light brown.
