SWEET POTATO CASSEROLE 
7 c. finely grated raw sweet potatoes (3 to 4 medium)
4 eggs
1 c. raisins
1/4 tsp. vanilla extract
1/4 c. orange juice
1/2 c. brown sugar
2 c. water
1 c. chopped pecans (optional)

Mix all ingredients. Pour into a 1 1/2 quart greased casserole. Cover and bake at 350 degrees for 1 hour. Remove cover and continue baking for 15 minutes.
