WHOLE WHEAT MUFFINS 
1 2/3 c. whole wheat flour
2 1/4 tsp. baking powder
3 tbsp. brown sugar
1 tsp. salt
1 egg, beaten
1 1/3 c. milk
4 tbsp. oil

Mix together the whole wheat flour, baking powder, brown sugar and salt. Beat egg until light; add milk and oil. Stir in whole wheat mixture just enough to dampen flour. Let stand a few minutes until mixture thickens, then drop by spoonfuls into greased muffin tins. Bake at 425 degrees for 20-25 minutes.
