LAINEY'S POTATO SALAD | |
8 red potatoes (boiled in salted water) 4 eggs (boiled and chopped) 1 cup mayonnaise or Miracle Whip 2 celery stalks, chopped 1/4 cup onion, chopped 1/2 green pepper 1/2 cup sweet relish 2 tbsp. cider vinegar 1 tsp. prepared mustard salt and pepper, to taste paprika, for sprinkling Peel and quarter potatoes, rinse well before boiling. Rinsing removes a lot of the starch. Potatoes will take about 16 minutes after they begin a rapid boil. Drain potatoes and cool for about 15 minutes. Then cut in cubes. While potatoes are cooking or cooling, prepare eggs. Mix about 1 cup mayonnaise or Miracle Whip (I use a combination in my salad) with chopped celery, onion, green pepper, relish, vinegar, mustard and a little salt and pepper together. Fold in eggs and potatoes. You may want to add more mayonnaise. When your ready to serve sprinkle with paprika. I use Hungarian sweet paprika Submitted by: Elaine Carmadelle |
