GERMAN POTATO SALAD 
1/2 c. diced celery
2 hard-cooked eggs, sliced
1 med. onion, minced
2 eggs, beaten
1 c. sugar
1/2 c. vinegar, diluted with 1/2 c. water
1/2 tsp. salt
8 med. boiled potatoes, diced
4 slices bacon, diced
1 tbsp. minced parsley
1/4 tsp. dry mustard
1/4 tsp. pepper

Add celery to diced potatoes, sliced eggs and onion. Fry bacon until crisp to beaten eggs, add sugar, spices, vinegar and water. Mix well.

Pour egg mixture into hot bacon and drippings and stir until mixture thickens, about 10 minutes. Pour over potatoes and mix. Let stand in cold place several hours.
