BLACK EYED PEAS & HAM HOCKS 
1 lb. dried black eyed peas
3 lbs. of ham hocks
2 onions, chopped fine
2 celery stalks, chopped
1 sm. bay leaf
1 clove of garlic, chopped
1 sm. can of tomato sauce
2 tbsp. chili sauce
Boiling water

Wash the peas. Cover with boiling water, cook for 2 minutes and remove from heat, let soak for 1 hour. Boil meat for 30 minutes in water and cover. Add peas, drained and remaining ingredients. Cover and simmer until tender, about 3 to 4 hours.
