SQUASH CASSEROLE 
1 1/2 lbs. zucchini, diced
1/2 lbs. yellow squash, diced
1 med. white onion
1/2 tsp. salt
8 oz. sour cream
1 carrot, grated
1 can cream of chicken soup
1 pkg. Stove top stuffing, prepared by directions on box

Prepare stuffing. Set aside. Boil zucchini, squash and salt in water until tender. Strain. Mix sour cream, carrot, soup, and zucchini mixture in medium bowl. Line a 9 x 13 baking dish with 2/3 of the stuffing. Pour on zucchini mixture. Top with remaining 1/3 stuffing. Bake at 350 degrees for 25 to 30 minutes.
