ITS NOT A SQUASH CASSEROLE 
4 to 5 yellow squash
1 tbsp. butter
1 lb. ground sausage
1 c. chopped onion
1 pkg. crushed unsalted saltine crackers
2 to 4 c. shredded cheddar cheese
Salt to taste

WHITE SAUCE
3 tbsp. butter, melted
3 tbsp. flour
1 c. milk

Slice squash into bite size pieces. Boil in water until soft. Drain. Put squash into a bowl with 1 tablespoon butter and salt to taste. Beat with a mixer until it is like mashed potatoes. Brown sausage, drain, and set aside. Make the white sauce by mixing the butter and flour together until smooth over a low heat. Add the milk slowly, stirring constantly to prevent lumping and sticking as it thickens. Add cooked sausage and onion. Set aside. In a lightly greased casserole dish, make a layer of cracker crumbs. Layer sauce mixture and top with cheese. Then layer squash and top with more cheese. Sprinkle the leftover cracker crumbs on top. Heat until cheese has melted in the microwave or a 350 degree oven.

Since microwave ovens vary in power, you may need to adjust your cooking time.
