ENCHILADA BAKE | |
1 dozen flour tortillas 1 lg. onion, chopped 1 lb. ground beef 1 (6 oz.) sm. can tomato paste 1 (6 oz.) can water 1 (10 oz.) lg. can enchilada sauce, hot or mild 1 lb. Cheddar cheese, grated 1 lg. can black olives, sliced 1 can chili con carne with beans Preheat oven to 325 degrees. Brown meat and onion in heavy skillet. Add tomato paste and water. Blend in enchilada sauce and bring mixture to a boil. Layer 3 tortillas in a casserole dish; add meat sauce, cheese and olives. Repeat layers until all is used, reserving some cheese for the top. Top with chili and sprinkle with cheese. Bake at 325 degrees for 1 hour. Serve with optional toppings: shredded lettuce, chopped tomato, chopped onion, green chilies, sour cream and guacamole |
