FATHER'S FAMOUS FISH | |
6 tbsp. flour 1/2 tsp. salt 1/4 tsp. white pepper 4 to 6 fish fillets (flounder, trout, etc.) 2 eggs, beaten 2 tsp. water 2 tbsp. oil 6 tbsp. clarified butter Juice from 2 lemons 2 tbsp. chopped parsley 1 tsp. Worcestershire sauce Mix flour with salt and pepper. Dip fish fillets in seasoned flour. Mix egg and water and dip coated fillets in egg. Preheat (medium high) a large skillet and add oil and butter. Fry fish 2 minutes on each side or until lightly browned. Place skillet with fish in a 350 degree oven for 5 minutes. Remove fish to a hot platter. Add lemon juice, parsley, and Worcestershire sauce to skillet. Cook and stir to deglaze. Pour over fish. |
