FRIED FISH 
2 lbs. trout or redfish fillets, cut into strips
1 egg
1 1/2 c. milk
1 1/2 tbsp. tabasco
1 1/2 tbsp. dijon mustard
2 c. corn meal
2 tsp. garlic salt
2 tsp. seasoned salt
2 tsp. lemon pepper

Mix egg, milk, tabasco and mustard together and set aside. Mix last 4 ingredients together. Dip fillets in first mixture then roll in corn meal mixture until well coated. Deep fry until golden brown at 375 degrees for 3 to 5 minutes.
