Catfish, skinned and deboned into fillets
6 bacon strips
Potatoes
Onions, pared and sliced
Salt and pepper to taste

Line a large heavy pot with bacon strips. Layer with catfish fillets, then potatoes, onions. Repeat until supplies are used. Cook over medium heat until all is tender. Season.
