FISH IN FOIL 
2 lbs. whitefish (fresh or frozen)
2 green peppers, cored, seeded & cut into strips
2 onions, thinly sliced
1 can diced tomatoes, drained
1 tsp. minced garlic
2 tbsp. lemon juice
2 tsp. salt or salt substitute
1/2 c. sliced mushrooms
1/4 tsp. thyme
1/8 tsp. red pepper flakes
1/4 c. melted butter
Olive oil

Thaw frozen fillets. Cut into serving size portions. Cut 6 pieces of heavy duty aluminum foil, 12 x 12 inches each. Grease lightly with olive oil. Place a portion of fish, skin side down, on foil. Brush lightly with olive oil. Top with green pepper and onion.

Combine remaining ingredients over fish. Bring the foil up over the food and close all edges with tight double folds. Make 6 packages. Place packages on a grill about 5 inches from moderately hot coals. Cook for 45 to 60 minutes or until fish flakes easily when tested with a fork. Serves 6.

To bake in oven: Heat oven to 500 degrees. Saute vegetables, except for tomatoes, until peppers and onions are wilted. Then stir in tomatoes, spices and lemon juice. Arrange packages on cookie sheet and bake 10 minutes.
