PORK VEGETABLE SOUP 
1 lb. pork stew meat, cut into 1/2" cubes
1 tbsp. cooking oil
1 c. chopped onion
1 tsp. paprika
3 c. chicken broth
1 c. peeled potatoes, cut into 1/2" cubes
1 c. frozen whole kernel corn
1 c. picante sauce
1 c. zucchini, cut into 1/2" cubes
1/2 tsp. minced garlic
1 (1 lb.) can Northern beans, cooked
1/8 tsp. ground black pepper
2 c. torn fresh spinach

In a large kettle, brown half of the meat cubes. Remove the meat cubes and brown the remaining meat cubes with the chopped onion and paprika. Drain off the remaining fat. Return all the meat mixture to the kettle. Add the chicken broth. Bring to boiling reduce heat, cover and simmer 30 minutes. Remove fat. Add the potatoes, whole kernel corn, picante sauce, zucchini, garlic, beans and pepper. Return to boiling, reduce heat. Cover and simmer 20 minutes or until vegetables are tender. Stir in torn spinach and simmer another 3 minutes. Yield: 12 servings.
