EGGLESS MAYONNAISE (VEGETARIAN) 
3 teaspoons lemon juice
1/2 cup soy milk
1/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon prepared mustard
6 teaspoons vegetable oil

Put all the ingredients except the oil in a blender. Blend on the lowest speed.

Gradually-literally one drop at a time-add the oil until the mixture starts to thicken.

Continue blending until thickened and smooth. Transfer to a jar and store in the refrigerator.

Yield: 3/4 c.

I did not measure carefully so i can't honestly say this wont thicken on its own, but having a problem with thickening I added a little flax seed & sorghum flour to thicken. Sorghum flour is non gluten. I also used almond milk & sesame oil instead of the oil suggested. I also added some sweetener in the form of coconut nectar but I would have used agave or another sweetener if it were as handy at the time. I did add extra salt to balance out the flavors. It turned out really good. I may try an oil free mayo next.
