CHILE NON CARNE (Vegetarian
Chili)
 
3/4 c. chopped onion
2 cloves garlic, minced
2 tbsp. olive oil
2 tbsp. chili powder
1/2 tsp. basil
1/2 tsp. oregano
1/2 tsp. cumin
1 c. finely chopped zucchini
1 c. finely chopped green pepper
1 c. finely chopped carrot
1 lg. can (28 oz.) tomatoes
1 sm. can (14 oz.) tomatoes
3 cans (15 oz.) kidney beans, drained

In a large pot, saute onion and garlic in olive oil. Mix in seasonings. Add vegetables and cook 20 minutes. Add rest of ingredients, bring to a boil; then simmer several hours. Top with chopped onions, chopped tomatoes, shredded lettuce.
