DIABETIC STRAWBERRY PIE 
2 pie shells, cooked
2 pts. strawberries
3 c. water
6 pkgs. Sweet-n-Low
6 tbsp. cornstarch
1 sm. pkg. sugar-free strawberry Jello
Red food coloring (optional)

In saucepan, add water and cornstarch; cook until thick. When it begins to thicken, remove from stove, add Jello, Sweet-n-Low. Let cool. Clean berries and place on cooked pie crusts. Refrigerate overnight. Top with topping if desired.

STRAWBERRY PIE TOPPING:

2 egg whites
1/2 banana

Beat eggs until stiff. Add 1/2 banana that has been well mashed. If desired, you may add 2 packs of Sweet-n-Low.
