PUMPKIN PIE FOR DIABETICS 
1 pie shell, unbaked
1/4 tsp. ginger
1 1/2 c. cooked pumpkin (15 oz. can)
1 1/2 c. milk
2 tsp. artificial sweetener
2 eggs, slightly beaten
1 tsp. cinnamon

Coat the unbaked pie shell with a thin film of butter or slightly beaten egg white to prevent a soggy crust. Combine all ingredients and mix well. Pour into unbaked pie shell; bake at 400 degrees for 10 minutes. Reduce heat to 350 degrees and bake for 40 minutes.
