FARMER'S (CARROT) CAKE 
1 1/2 c. corn oil
2 c. sugar
3 eggs
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
2 tsp. vanilla
1 tsp. salt
2 c. shredded carrot
1 c. chopped nuts
1/2 c. crushed pineapple

Combine all ingredients in a large bowl and mix until well blended. Pour batter into 9 x 13 inch buttered pan and bake at 350 degrees for approximately 1 hour. After cooling, ice with cream cheese icing. Makes 24 bite sized servings.

CREAM CHEESE ICING:

3 oz. cream cheese
1 1/4 c. powdered sugar
1 stick (1/2 c.) butter
1/8 c. crushed pineapple
1/4 c. chopped walnuts

Cream butter. Add cream cheese and sugar until fluffy. Mix in pineapple and walnuts.
