PUFF THE MAGIC PANCAKE | |
4 beaten eggs 2/3 c. all purpose flour 2/3 c. milk Grease a 10 inch ovenproof skillet with shortening. Place in the oven. Preheat the oven to 400 degrees (about 10 minutes). Meanwhile, in a medium mixing bowl beat together the eggs, all purpose flour, and milk till smooth. Pour into the hot skillet. Eggs make this puff rise. Let your child watch you put the batter together. When it's done, call him or her to the kitchen to see the amazing puff come from the oven. 2 tbsp. cooked bacon pieces Bake in the 400 degree oven for about 20 minutes or till pancake is puffed and golden. Sprinkle with cheese, then bacon pieces. Cut into wedges to serve. Serves 4. Preheating the skillet allows the batter to start cooking the minute your pour it into the pan. Then, as the batter bakes in the oven, it puffs magically. |
