CHOW MEIN CASSEROLE 
1 lb. hamburger
1 lg. stalk celery, chopped (about 3/4 c.)
3/4 c. chopped onion
1 1/4 c. boiling water
1/2 c. uncooked parboiled (converted) rice
1/2 tsp. salt
1 can (10 1/2 oz.) condensed chicken with rice soup
1 can (4 oz.) mushroom stems and pieces, drained
1 tbsp. packed brown sugar
2 tbsp. soy sauce
1 tsp. butter
1 1/2 c. chow mein noodles

Cook and stir hamburger, celery and onion in 10 inch skillet until hamburger is light brown; drain.

Pour boiling water on rice and salt in greased 2 quart casserole. Stir in hamburger mixture, soup, mushrooms, brown sugar, soy sauce and butter. Cover and cook in 350 degree oven 30 minutes; stir. Cook uncovered 30 minutes longer. Stir in noodles; serve immediately. 5 or 6 servings.
