SPARE RIBS AND SAUERKRAUT 
7-5 lbs. spare ribs
6 tbsp. salt
1/4 c. pepper
4 (No. 10) cans (3 1/4 gal.) sauerkraut, canned

100 portions. Navy recipe.

Put spare ribs in steam kettle and cover with water. Add salt and pepper. Cook slowly for 45 minutes.

Put sauerkraut in roasting pan. Cover with ribs and bake in a moderate oven 350 degrees F. for 45 minutes.

Potatoes may be boiled in stock after removal of spare ribs.
