GRILLED DIJON CHICKEN
2 whole, boneless, skinless chicken breasts
3 tbsp. Good Seasons Italian dressing (the one that you mix with your own favorite olive oil & balsamic vinegar at home in the free cruet)
1 tbsp. Dijon mustard
1 tbsp. honey
Dash of salt & pepper

1. Cut each breast into 2 pieces. Remove all fat and visible tendons.

2. Pound each piece lightly to tenderize. Use the flat side of a meat cleaver or heavy chef knife or mallet.

3. Place the chicken in a small casserole dish (just large enough to fit).

4. Mix the dressing, mustard, honey, salt and pepper in a cup using a wire whisk.

5. Pour the marinade over the chicken. Turn each piece over to make sure they are fully coated. Cover and refrigerate for at least 1 hour. Several hours is better.

6. Grill the chicken pieces over medium-high fire. Grill for approximately 3 to 4 minutes on each side. Serves 2.
